What’s for breakfast mom?

Morning Everyone,

I was in deep sleep thinking it was a dream, when I felt a shake and the question being repeated again, oh noooo it’s not a dream…

Now I must tell you it’s barely 8 am on a Sunday morning no less, my dream last nite was to wake up around 10:00 lull in bed for a little bit, before I start the day..

As most of you know with a growing teenager, food is on the top of their priority.. I made a deal with her, set the table and I’ll get breakfast going..

wow she took the Royal Doulton set out..

The Cast:

Eggs, Potatoes, Smoke Bacon,Red Peppers, Green Peppers, Garlic, Parsley, Onions, Tomatoes,Black Pepper, Jalapeno, EVOO.

 

The Journey:

Peel, dice the potatoes, dice everything else.

in a pan add the dice bacon, then sauté the onions, garlic, peepers, add the potatoes, then parsley.

Beat the eggs w/black pepper, parsley, then add the evoo to the pan then the egss and scrambled, then add the vegetable mixture, mix well..

Nice set! Looks yummy! My fave breakfast is sausage gravy and homemade buttermilk biscuits. Warms you from your head to your toes.

Breakfast is my favorite meal of the day! I love eggs benedict. Poached eggs over an English muffin, layered with smoked ham and topped off with hollandaise sauce. Yummy!

My new favorite breakfast (and dinner) is Eggs in Purgatory, which I found in the Book by the Same name. I had to modify it for 1 because I'm the only one who likes it.

Half a can of diced tomatos in a small sauce pan. Add garlic (minced, dried, powder) and chipotle pepper (I love this stuff so I add about 1/3 tsp.) When it just starts to bubble add 2 eggs you have cracked into another bowl into the mixture, 1 egg at a time. Basically poaching the eggs in the tomatos. When the egg whites are solid and the yolk offers you resistance to a gentle pressure it's completed. Serve on rustic toast.

I got a jar of the powdered stuff and a bag of the dried chipotle peppers through Penzeys. www.penzeys.com. This place is wonderful, but like the Cricut... caution should be used lol. The catalog even has terrific recipes.

I'm thinking of mixing the Purgatory Eggs up even more with some mushrooms, maybe some zucchinis. And the original recipe called for some onion to be cooked in the pan with olive oil before adding everything else, but onions and my digestive system don't get on well.
